CHICKEN CACCIATORE CASSEROLE

Liquid Core® Electric Skillet / Casserole and Cover

Ingredients:

  • 4 split boneless, skinless chicken breasts
  • 1 - 28 ounce can tomatoes, diced, not drained
  • 1 cup elbow macaroni, uncooked
  • 1 medium onion, sliced, separated into rings
  • 2 medium sweet bell peppers cut into 1/2 inch strips
  • 1/2 pound mushrooms, sliced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

Preparation:

  1. Preheat Liquid Core® Skillet, uncovered, at 375° F. Add chicken, cover skillet, and cook 5 minutes.
  2. Turn chicken, season with salt and pepper. Add tomatoes and onion; stir to combine.
  3. Add remaining ingredients. Cover and reduce heat to simmer. Cook 25 to 30 minutes or until chicken and macaroni are done.
