LEMON-GLAZED SALMON FILLETS

11-inch Skillet

Ingredients:

  • 2 tablespoons margarine
  • 2 tablespoons packed dark brown sugar
  • 2 tablespoons fresh lemon juice
  • 2 pounds red salmon fillets
  • Lemon slices, garnish
  • Fresh parsley sprigs, garnish

Preparation:

  1. Melt margarine in skillet over medium heat. Stir in brown sugar and lemon juice.

  2. Gently place fish in lemon mixture, skin side up. Cover; when cover spins freely, reduce heat to low and cook 8-10 minutes or until fish flakes easily.

  3. Carefully transfer fish to serving platter, placing skin side down.

  4. Return heat to medium and boil sauce until thickened, stirring constantly.

  5. Drizzle sauce from pan over fillets. Garnish with lemon slices and parsley sprigs, serve.

Serves 4
