SALMON FILLETS

Ingredients:
- 2
tablespoons margarine
- 2
tablespoons packed dark brown sugar
- 2
tablespoons fresh lemon juice
- 2
pounds red salmon fillets
- Lemon
slices, garnish
- Fresh
parsley sprigs, garnish
Preparation:
- Melt
margarine in skillet over medium heat. Stir in brown sugar and
lemon juice.
- Gently
place fish in lemon mixture, skin side up. Cover; when cover spins
freely, reduce heat to low and cook 8-10 minutes or until fish
flakes easily.
- Carefully
transfer fish to serving platter, placing skin side down.
- Return
heat to medium and boil sauce until thickened, stirring constantly.
- Drizzle
sauce from pan over fillets. Garnish with lemon slices and parsley
sprigs, serve.
