LIFETIME FAJITAS

11 inch Skillet and Cover
4 quart mixing bowl

Ingredients:

  • 1 pound boneless, skinless Chicken Breast, sliced into thin strips
  • 1/2 cup Lime Juice (120 ml.)
  • 2 tablespoons Soy Sauce (30 ml.)
  • 1/2 teaspoon ground Cumin
  • 1/4 teaspoon Black Pepper
  • 1 clove Garlic, minced
  • 1 Cup Onion, sliced thin (240 ml.)
  • 2 colorful Sweet Bell Peppers, sliced thin
  • 8 Flour Tortillas

Preparation:

  1. Prepare a marinade by mixing limejuice, soy sauce and garlic in mixing bowl. Place raw chicken pieces in marinade and refrigerate for 30 minutes.

  2. Preheat skillet over medium heat until a drop of water will bead and dance when added to the skillet. Remove raw chicken from marinade and place in skillet. Cover and cook for 10 minutes, stirring occasionally to cook all sides of the chicken.

  3. Add sliced onions and peppers to skillet. Cover and cook for an additional 5 minutes on medium heat. Serve with warm tortillas.

Variation: Beef Fajitas - Substitute 1 pound round steak with all visible fat removed cut in strips.
