LOWFAT CHILI

5-Quart Cooker

Ingredients:

  • 1 pound (454g) dry pinto beans
  • 6 cups ( 1-1/2 liters) water
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 pound (454g) ground turkey, browned
  • 2 14-1/2 ounce (406g) cans stewed tomatoes
  • 2 10-3/4 ounce (300g) cans tomato soup
  • 1 1-1/4ounce (35g) package chili seasoning mix
  • 1/4 cup (60 ml) sugar, optional
  • Salt and pepper to taste

Preparation:

  1. Rinse and salt beans. Place beans in large bowl, cover with water. Soak overnight.

  2. Drain and rinse beans. Place beans, onion and garlic in 5 Quart Cooker; add 6 cups water to cover beans. Cover and bring to a boil at 350°F (177°C), cook for 30 minutes. Reduce to simmer and cook for 30 to 45 minutes or until beans are tender.

  3. Add remaining ingredients, stir to combine. Cover and simmer for 1 to 2 hours. Serve with low-fat cheese and crackers.
